This Honeydew Honey is of a light yellowish-brown colour and has a delicate, mild taste and a rich aroma of wildflowers. Our 100% raw honeydew honey is an extremely high valued variety due to the broad spectrum of tree nectars, botanicals and herbs it contains.

You can use it as a natural sweetener in cooking and baking or in various drinks like tea and coffee.

All You Need To Know About Honeydew Honey

Honeydew honey  is the name used for a variety of honey that isn’t made out of flower nectar. This particular type is made from a watery secretion of small insects (aphids), that consume plant sap. The secretion, known as honeydew, in a form of tiny droplets found on trees mainly in the summer, attracts bees. They collect it, thicken and lock it in the cells of the hive – as honeydew honey. Much less frequently this honey could be made from various smaller plants or grasses which generate sap themselves but in smaller quantities.

Honeydew honey has a much darker colour to other varieties –  medium to dark amber, sometimes with brown, greenish and reddish highlights, at times nearly black. This honey usually has a thick consistency and a smooth texture. When it comes to smell and taste, the honeydew honey has more aroma if its pigment is darker. This honey is more likely to have a medium taste intensity and is delicately sweet. Different varieties have a resinous, woody, warm aroma, along with other notes. That depends on the species of insect as well as the tree the honey has been made out of. For instance, it might have cooked fruit, resin, smoke, malt, caramel or warm spices flavour notes. Often it has slight astringent notes or a hardly traceable hint of bitterness.
