What Is Linden Honey?

Linden honey has over a thousand years of history. The lime tree is referred to as the tree of life in many civilisations. This honey is one of the best varieties, with a one-of-a-kind spicy and fragrant flavour. Its colour ranges from yellow to light brown. Lime honey is also referred to as linden or basswood. This variety of honey is made from pollen and flower nectar of lime flowers. Botanically, lime has at least 33 species in the Tilia genus family. All of them are nectar-generating and can provide food for bees. The resulting honey is a superior quality monofloral variety with a medium taste intensity.

It has a rich flavour profile and a number of health benefits, such as natural tonic and liver-protective properties, antioxidant, antibacterial, expectorant, and mild cough-suppressing effects. The honey is referred to as lime, linden or basswood just as the tree species are called is in various parts of the globe. In Great Britain it’s known as the lime tree, in Europe - as linden and in North America – as basswood. The name ‘linden honey’ can be deceiving though. Bear in mind that it’s not the same as the honey made from the flower nectar of the green citrus fruit tree. Sweet Honey Co’s lime honey is light-coloured with a pleasant pale amber shade with rich greenish reflexes upon harvesting.

Its colour transforms over time, becoming a clean, pale yellow, or a whitish-yellow as it crystallizes. Our product is light, fragrant, deliciously sweet, but with a perceptible bitter aftertaste. Its flavour profile is very rich, and it has a slight woody, minty, hay and menthol or balsamic notes. A raw and natural linden honey often starts to crystallise at least four months after the harvest.
